Yes, you can. I was trying to link to a document about how to do this, but Community is giving me an error saying it's spam...so go to ScriptRunner dot Adaptavist dot com and click on JIRA at the top left, then scroll down on the left to Behaviours Examples and select Field-Level Permissions.
