That page mentions an option that "Stops a pull request from being merged if any pull request tasks are still unresolved. Read more about pull request tasks." but the link there goes to a page that doesn't contain the word "task" anywhere. What's that about?
The big feature we'd like is the "Reset approvals when the source branch of a pull request is modified" one – any idea whether that'll make it into Bitbucket Server?

Hmmm. it looks like the pull request tasks link is pointing to the wrong page. This page describes pull request task and how to use them.
With respect to the "Reset approvals when the source branch is modified" feature. A (free) plugin is available on the marketplace that provides this feature.
