My goal is to implement some sort of confirmation when checking off a Task item. Currently it's much too easy to simply check or uncheck something, and often users don't realize they've done it. If we were to use this feature to track a to-do list, we would want one extra layer to confirm that the user means to check off that particular task.
Is this possible?

The idea to have some sort of control or deterrent from accidental checking off a task list item is a great idea. The good news is there a feature request similar to your idea. The feature request suggests only the user(s) assigned to the task are the only ones permitted to complete the task. You may find that feature request at CONFSERVER-56358. We would suggest you vote and watch this request to receive future updates.
If you needed a solution urgently then the marketplace will most likely have an add-on to suit your requirement. Here are 2 preset searches within the marketplace, the first is for Confluence server task list and the other is for Confluence server workflow (workflows include assigned tasks within them). Within these searches are a few add-ons which may provide a solution to your issue.

Albeit the above response might not entirely meet your needs, CONFSERVER-56358 is certainly a step in the right direction.
