How to allow users to interact on a single page in a space that is otherwise view only to them?

I feel like in the past I'd been able to leverage page restrictions to ADD page access to groups - to edit a page that we need cross-team collaboration on - without making the entirety of the space writeable to that audience.

How can I do that?

There were some versions of Confluence where you could grant a write access (the way read restrictions work have never really changed) but it was causing so many problems with so many people (not to mention security bugs), Atlassian reverted to "you need edit rights at a space level, and restrictions can take that away on a page by page basis".   You'll need a page structure that supports that I'm afraid.
