We have no current system-administrator and there are several Spaces that I do not have access to the "look and feel" menu in order to export the space pages.

I have Confluence Admin permissions to these Spaces, but it seems that since I did not create these Spaces, I do not have the ability to export multiple Space pages into one document.

These spaces have the standard Confluence theme and not the documentation theme.

We have Atlassian OnDemand.

If you have no admins to ask, you'll need to raise a support call with OnDemand support to get your administrator replaced (presumably they left your organisation and didn't sign anyone else to the group).
