Is there a way too see the contributor list from a certain date?

Global Activity under ADMINISTRATION.

You have to turn it on first as it's off by default, and so, you'll only get data from when you turn it on.

Just beware though that this could cause the instance to slow down some which is why Atlassian disables it be default.
