Is there a way to setup a space up so that each page will automatically display a list of child pages for that page?
I know you can add the Children Display macro for a particular page, but we would like this to be the default behavior.
You could try to create a template with this macros and crate pages form this template.
That will work for future docs. But what about the hundreds we have now?
Is there a way to have them show child pages without modifying them all?

No, you'd need to visit each page and add the macro to it.

We recently upgraded from 5.10.7 to 6.7.1. We were using the documentation theme where child pages *were* listed by default. In other words, this functionality (listing child pages by default) has gone away in 6.7.1?

If it means table of content macro on side panel - then it is a bug: https://jira.atlassian.com/browse/CONFSERVER-39960.

No, the page itself. In 5.10.7, the documentation theme would automatically include child pages in the page itself. That theme, apparently, has been removed, and we don't see a way to replicate that behavior (without individually updating all of our docs).
