I really don't like the new restrictions imposed by the New Editing Method in Confluence.

Can use the Legacy Editing Method when I create new pages?

Hi @Vaughan Morgan Jones , welcome to the Atlassian Community.

You can select the Legacy Editor Template from the menu when creating something new.

And how about the OP's question of reverting an existing page to legacy?  The new editor leaves a lot to be desired.
