I want to summarise my user stories in a confluence page so that stakeholders can view and comment, but keep them away from the actual JIRA dev tickets
If I add the standard JIRA ticket link macro it shows the ticket number, status and summary

You can try using an add-on like Jcreate that we created at Methoda, which allows you to create a Jira Issue from inside confluence while keeping the Jira experience. see:

The JIRA issues macro can show a list of issues based on a JQL query (instead of just a single issue key). You can modify the columns displayed in the dialog.

Hi Benjamin,
if you are looking for a specific issue, just enter the issue key and click the magnifier. A list of matching issues will be presented (only one in this case).
Select the issue and click Display options and select Table. In field Columns to display, remove all columns you don't need and add Description.
Tested on Confluence 6.8.1.
