I understand you are looking to find the most recent version of Sourcetree that works with Mac OSX 10.7.5. This has been a difficult question for me to answer. I don't have access to that older version of OSX to test this out.
I did find that the announcement of the 2.0 version did clearly support 10.7+ per https://blog.sourcetreeapp.com/2014/09/25/sourcetree-for-mac-2-0-released/
However I found that the 2.3 release notes in https://www.sourcetreeapp.com/update/releasenotes/2.3.2.html#version-2.3.2 clearly marked Sourcetree 2.1.x as requiring support for OSX 10.9 and higher. So, I believe the answer to your question is somewhere in the 2.0.x line, which would be the 2.0.5.8. version currently on the Download Archives for Sourcetree.

We appear to have followed similar paths in our research. I, too, decided on 2.0.5.8., but it failed to open after I installed it. Now, I did think to reboot my machine and even clean my permissions, but have since decided to use BBEdit.
As more recent versions of BBedit offer a full integration with GIT, I have decided to make do without SourceTree in preparation for a hardware and software upgrade in the more distant future and the full integration with BBEdit.
