It is not possible to change the time server that Companion queries. However Companion does not sync with an external NTP server when used with Confluence Server/DC.
In the latest version of Companion (since 1.2.0), the NTP time server syncing is only done when an "Edit File" request is initiated from Confluence Cloud. Given that this question is tagged as Confluence Server, even if you were to change the NTP servers, it wouldn't make a difference.
Could you provide some context to the question and why you are trying to achieve this?

Our security team noticed queries to external ntp servers and approached me with this question.
We are using confluence server on premise, but we are using Companion in Version 1.0.0. From your answer I assume that updating companion would eliminate the need to approach an ntp server altogether in this constellation, is that correct?

Yes that is correct, upgrading the Companion App to the latest version will ensure the NTP requests are not sent in your case.

The companion app doesn't use ntp servers directly, it uses the time from the device it is running on. That probably means it already is using an "internal connection" anyway.

Our security team explicitly mentioned connections from the companion app to external ntp servers. From Alex K's answer I would assume it depends on the version of the app that is used?
