I am using docker container as the Confluence instance. When the container died, I restarted a new container, but it seems that the container's Atlassian generated SERVER-ID is different - so I can't use my license key - how do I change the server ID for my license key? Either through the product side or through the Atalassian portal side.

There's nothing intrinsic that ties a server ID to a license key, so there should in fact be nothing stopping you from entering in the same license key, as long as it's valid for the version of Confluence you're installing. Is there anything that leads you to believe you can't use it?
