is there a way to watch a space and get notified only if a new page is added? Normally a watcher is also notified if a page is edited, but since there are lots of updates that will result in too many notifications.
No, but you could watch the space and set up an email rule to delete page modification/deletion emails.

No, there is no way of doing this with native Confluence functionality.
However, you may find the Notifications for COnfluence add-on useful - I've not used it but in the description of it's functionality it says "Optionally watch any new pages that are added to the hierarchy", which sounds like what you want.

But can I just say that Confluence is a Knowledge Management System ....
... and Knowledge is not knowledge unless the Users know when new knowledge is created or updated
In the past when people created or edited something they would send an email so I don't necessarily agree that Confluence creates too many emails
I do concede that perhaps site administrators might have some reason for just knowing when new pages are created ... but why would they need to know just that?? If they are doing their job to the full, they should keep an eye on what people are doing on each page so they can offer tips and suggestions on how to do things better .. or identify when a new plug in might be helpful
