When inserting JIRA Issues in Confluence using the JIRA Issue/Filter macro...

...can I insert an issue which includes modifiers (ie. Assignee) without selecting the table option? Additionally, can I insert a list of issues at once but have them displayed as single issues (not in table format)?

When you insert the Jira macro on a Confluence page, you can choose the Columns to Display. See attached screenshot.

Yeah I know how to do that... I want to be able to insert them NOT in table format and instead as single issues which according to Atlassian support isn't possible.

And, I also want to post single issues (again NOT in table format) so they ONLY display the Key, Assignee, and Status (without having to post the entire summary or using a table).

If you are looking for more control on display options, there is a Marketplace add-on available for Confluence Server. Please take a look at https://marketplace.atlassian.com/apps/1212278/advanced-jira-issue-insert-macro?hosting=server&tab=overview

As for the native functionality, it is what is documented in the link provided.
