When a user logs a call, they select a group, but when we manage the queue we don't have a field that displays that group
Is there a special name for this in the back end or is the functionality not there?
I have checked if Components can resolve the Jira Service Desk team query about the field that will display the group when managing the queue. However the Components functionality is titled differently on the Service Desk, which does not serve the purpose of this request which is about finding a field that displays a group when a queue is managed.

When you say "they select a group" what do you mean?
Your Jira Administrator would have had to create a custom field to hold this group data. You need to determine what this custom field is, and make sure it is on the view screen of the issue type.
If you look at the configuration for the request type, you should be able to see what field the user is filling in when selecting a group, and determine what custom field that is.
