Is it possible within the “queues” to display different fields in Jira servicedesk
Sure, if you have the required access, you'll have an "Edit Queue" button in the upper right; clicking it allows you to modify the query and displayed fields.
If you mean the information you see when viewing a queue, then no, it's a non-customisable form built into the service desk software. You'd have to amend the code to change it.
