You can add new columns to next-gen projects and then delete them like shown in the screenshot.
Separate workflow statuses don't exist for next-gen project, it's just the columns and that's it.

At the moment, I don't even have the board in Next-gen. Looks like the Kanban template is not available when I try to create a new next-gen project. There are only 3 templates available. Am I missing something?

As shared in the screenshot above, I do see two default templates available for next-gen projects when I try to create next-gen projects on the cloud instance. These 2 templates should be available to everyone.

I contacted Jira support and now, I have the option to edit the workflow if I use the External service desk template. It wasn't there before so I am not sure if they made any changes to my cloud instance.

My screenshot was from the Jira software next gen template and your is from the Jira service desk next-gen template. But I am happy to know that the support team has fixed the issue for you.

Statuses and workflows are defined by the columns in the board for the project. While you can add “+” columns (statuses) I don’t believe you can remove them. Workflows don’t really exist in NG except in the Left to Right flow of issue on the board.
