Yogesh is correct that this is not possible out of the box.

Currently, JSD will support only below fields while editing issue during automation.
Here is the feature request has been raised for the same to allowing the other fields like label, custom fields and all..please vote.

Organizations are not currently editable, but will be next week. We will also add Tempo Accounts and potentially other custom field types added by popular Marketplace apps.

I have a small query, I am using Automation for Jira - Server Lite app on my Jira SD 4.0 version and was seeking some information. is it possible to auto-update Organization field automatically based on email id of the requester when a new issue is created. if yes, how? Can you please provide me a sample about that.
btw, I already have the email domain of the reporter in a custom field, and so copying the value from custom field to Organizations field is also fine.
