Rules for customer notifications email address

Hi

I've been trying to find a solution to a very specific request with no luck and would like to know the rules for email notifications in JSD Server.

We're a service provider with multiple customers, each of those customers have a different way of logging tickets with us (email, customer portal, issue collector) and all tickets go to the same JSD project.

Now I want to use a generic, customer-agnostic email address for our customer's notifications (something like noreply@itsupport.com), I've tested this on our test environment and seems to work but I want to be 100% sure that whatever email address I set up as the default for customer notifications it will always show the same email address and not a different one.
