Specifically on your questions:

  • Epics assignment is not interchangeable between Next-gen issues and Classic epics. 
  • Time tracking has been recently released to Next-gen projects. We are working on an issue that might enable Apps to perform time tracking across Classic and next-gen issues.
  • In the short term, there's also a new Google Sheets integration that you could try https://marketplace.atlassian.com/apps/1216313/google-sheets-integration
