Can I extend a Service Desk trial license for 30 more days? If so, how? we have a large company that moves slowly and only 2 people have looked at the software. I want to get some more to do so.

If you go to the Atlassian customer portal (https://my.atlassian.com/) you should be able to get a new evaluation license generated or ask a customer support rep to send you one.
