Is it possible to change to layout screen of the issue based on the workflow step that you are in.
For example:
We create a new issue with the following fields:
Summary, Description, Assignee, Priority.
Once created I would like everything to be hidden except for the 4 fields that I named above. Also it would be nice to give different color to for example the background of the description field (so that it will be easier to notice).
Then we click on the next step: Analyse needed.
In this step we have for example the following fields that need to be filled in:
Assignee, Due Date, Description.
Once filled in, we want the issue screen to show these 3 fields and the summary screen..
Also here we want to be able to add colors to make the issue more noticeable (for example the priority and description).

You can not hide some system fields like fix version, status, assignee and so on in the view issue screen. That is why they will be always present in the view issue screen.
But you can limit fields in the create issue screen. Go to the project settings -> screens and add required fields in the Create issue transition.
Then you should define a new screen for the Analyse needed transition with the Assignee, Due Date and Descripton fields.
To colour field you can use a plugin like:

Is it also possible to change the background of the description to something else instead of picking 1 color for 1 field?
So once filled in, we want to background of the description field to be gray or something.

Kindly have a look at the plugin, which I provided. I think you can choose different colours there.
