Creating sub-tasks

is it possible to have a different screen when a developer creates a sub-task, currently this is the same screen as when a story or epic is created

Yes, it is possible. You can create new 'Sub-task Create Screen', 'Sub-task Screen Scheme' and then map this to Sub-task issue type in your ' Issue Type  Screen Scheme'
