Click on the Project Settings - Summary.
There you can see the name of the Workflow Scheme. Copy the name.
In a "regular" Jira window push . (period) or gg, write Workflow schemes in the little pop-up window.
Do a ctrl-F and paste the name of the workflow scheme to find it.
Click on Edit in the line of that workflow scheme.
Click on "Assign" next to the workflow that you want to be the default workflow for any unassigned issue types.
