how do I enable email notifications for a specific field? The fields is "Approvers" and I would like the user to get an email notification every time there is activity on the card, similar to the Assignee field.

To do this, you need to update your notification scheme. If you haven't ever done this before, it isn't difficult, but you do need to be aware that all your projects will likely be using the default notification scheme. If you don't want all your projects to reflect the changes you'll be making, be sure to create a copy to modify.
Once you've decided which notification scheme to modify, go into the scheme by going to "Administration">"Custom Fields">"Notification Schemes">"Notifications" on the scheme you want to modify. You could also type "." which should pop up a search bar. Type "Notification Schemes" in that bar to navigate to the correct location.
Once you are modifying the notification scheme you want, go to each event and clikc "Add". That button should be on the right hand side of the screen. Towards the bottom, there will be an option for "User Custom Field Value". You should be able to select "Approvers". Once you have modified all the events you want, simply associate that scheme with your project. and you will be good to go.
