I have a custom issue type and I would like to restrict use of this custom issue type to a custom sub-issue type. Can I achieve this without triggers, events or some kind of additional scripting?

Not out of the box. If the subtype is available in the project it can be used. There may be a plugin to do this, I suggest you search the marketplace if you haven't

Thanks, I really couldn't find it in the docs or browsing the menus.

I've had no luck finding exactly what I'm looking for in the marketplace, but it's a good place to keep an eye on.
