When projects complete they no longer display in the epic view.  How do I have JIRA display or report the completed projects?

Hi Will,

For Scrum Boards you can use the Epics report, check here:

https://confluence.atlassian.com/display/AGILE/Viewing+the+Epic+Report

or better, you can use the Epic Work View for JIRA, it contains statistics on completed stories :

https://marketplace.atlassian.com/plugins/com.cobalt.jira.plugin.epic.EpicPlugin

I hope this helps.

Cheers,
