"status CHANGED FROM "Open" TO "In Progress" AFTER startOfWeek("-7d")"

Haven't tried this myself.

Or "status CHANGED FROM "Open" TO "In Progress" AFTER startOfWeek()" and make a subscription to this filter to run on the last hour of Saturday.
