We do not require Resolution and have already set up the workflow having just moved from Wrike.
Resolution is currently required to be updated to correctly show competition in our sprints.
What we want to do is simply remove Resolution.
Can this be done, if so how?

What do you mean "show competitions"?
Anyway, You can do one of the two:
1. You can go to the Field Configuration and hide the resolution field.
2. You can automatically set resolution on transition. You need to add the Update Issue Field post function for the required transition. And in this post function you can set the resolution field.
If you don't use resolution, you will find a lot of things in Jira start reporting stuff you don't like. Specifically, you will find issues simply never end.
You can hide it from your users as Alexey says, but you must follow his second point if you want a system that can report properly. We don't care if your users ignore resolution, but as an admin, you can't just hide it, you must understand it and deal with how it works.

@Peter Wyborn if you don't set the resolution you issues will never show completed. JIRA uses the resolution field for the Assigned to Me and other reports. Do not set it initially, you'll mess up the reports. I suggest you use @Alexey Matveev #2 option of setting the resolution on the last transition when you want the issue closed.
