How is an Epic assigned a workflow?

Hi All - Newbie here.  I am working with the Jira cloud implementation.  I am investigating a project, Test Project 04 (TP04), that I believe I created with default settings.

In Project settings->Workflow, the issue types Story, Bug, Epic, Task, and Subtask have been assigned to "Software Simplified Workflow for Project TP04".

In Settings->Issues->Workflow schemes, I see I have a custom workflow scheme that assigns a single workflow to issue types Unassigned Types, Task, Sub-task, Engineering Task, Bug, and Story. 

Back to In Project settings->Workflow, I press the "Switch Scheme" button to select the custom workflow scheme.  When it is complete, I notice that "Epic" is assigned the custom workflow even though "Epic" wasn't part of the list of issue types in the custom workflow scheme. 

Was this assigned because of the "Unassigned Types" issue type assignment in the custom workflow scheme?

Yes, you are absolutely right.  The "unassigned types" is the default - if you don't explicitly say "use workflow X for issue type Y", Jira will use the one mapped to unassigned types.
