With default configuration you will not be able to configure your requirement and you can delegated custom fields creation with help of below app.

You have available in the marketplace Profields app. Profields gives you fields for Projects, and you can have any field type: Select List, Status, Text, etc...

Also, you have a Project Navigator where you can work with your projects!
