How to export the custom field values to excel Sheet

Not sure what you mean. When you export to if you pick the custom fields the value of the field will be exported.  If you mean all the possible values of a select list I don't believe you can do that.

You can export as @Joe Pitt mentioned. You could also use Better Excel plugin to export to Excel. Please check.
