How to replace the word in the mail body on the workflow post-function.

Hi,

I would like to replace the word in the mail body on the workflow post-function.

For instance, A part of body as the following;

* Dear, Assignee

I would like to replace the "Assignee" to the person who is supposed to be assigned actually.

Is there any way to make it possible?

Please kindly let me know if it would be, and for sure it would be a quite helpful for our operation.
