The new view does not provide an Edit button to be able to see all the individual fields in the task. And I do not see any way to adjust the Sprint that task is assigned to.

When viewing the new issue view, please scroll to the bottom of the page. On the lower right hand side, there should be a button that says "Show more". If you click this, you will see all fields that are on the screen. If you have the "Sprint" field you should be able to see it farther down your issue.

When I click show more, I only get the option for Labels and Components. I don't see any way to show my other fields that are not visible. Seems like I cannot change what is showing on the page as default, but it also does not give me an edit button to go further into the task.

This likely means that the sprint field is not on the screen for that issue type. You need to go into the project administration, find the screen for the "View" and "Edit" operations. Add the sprint field onto the screen and then try again.

I really do thank you for your response. I spent 30 minutes trying to do what you advised with no luck. I think the person who customized our set-up made it more complicated than necessary. Do you know if there are any partners or vendors who help smaller companies like ours (15 people, mix of software development and marketing projects) set up JIRA cloud so it actually works for us?
