I'm looking to try report on the time we spend on different activities across a number of different teams and I'm wondering whether at Epic level it is possible to get a time stamp when the status changes? Both when it is put into "in progress" and also when "complete". I know how to export this data to excel, but just need to understand if it is possible?
Any help or suggestions you can give would be much appreciated!

I understand that you would like to add your Epics with the time you Spent in some status.
I have two possible suggestions that might give you a similar functionality:
1 - You can use the Time reports app. This app provide you with the Time In Status Report that you can use to know the exact time you spent on each Status:
2 - You can add a single date/time custom field to get the time that each transition was performed in your Epic. The steps would be:
- Create two new date/time picker custom fields: one to get the time of the "in progress" transition and another to get complete time.
- Navigate to your project > Project Settings > Workflows > Edit > Diagram mode
- In both "In progress" and "Complete" transitions, add the post function "Update issue Custom Field"
- Configure the post functions to update the relevant custom fields you created with the %%CURRENT_DATETIME%%, as further explained in this answer.
Doing that, you will have the exact time when the issue was transitioned.

Also, you can use app Time in Status for Jira Cloud to know the exact time your team spent on each Status (by report Assignee time in status).
And Issue History can help you monitor when and what changes happened with each issue (including status changes).
