We're currently using the OnPrem version of Jira and i like to know if there are any possibilities to create tickets out of Email support? I Know that the OnPrem Version is no longer Supported but is there any Thirdparty solution for that?

There are still several ways to create issues out of emails. If you are using Jira Service Management, this should be straight forward via project settings.

If you are using Jira (Software) you can still setup basic incoming mail functionality:
Or you go all the way and use a separate app, for example Email this issue to have even more control over incoming mails and automatic prefil of issue data.

Adding to Kai's answer, I would like to highlight some features of the Email This Issue application.
The Email This Issue mail handler not only creates or comments on issues, but also offers additional functionality. It can store sender and recipient information in custom fields, which can later be used to send notifications to these addresses, even if they are outside of Jira. Moreover, it can populate fields with default or email-driven data, trigger workflow transitions, and more.
