We are stuck and spent a lot of time exploring the community and knowledge base.
We are trying to get JIRA software AND JIRA Service Desk to share the same field "Organization" field in order to avoid duplicates (having the same info in 2 different fields do not seem accurate from a Best Practice Perspective).
Would anyone have some ideas / recommendation?

Let me rephrase then, a customer is an email address in JSD.
I'd need to share the Customer's entity name (so called Organization in JSD) between JIRA and JIRA SD. Based on the documentation I've seen the Organization seems a JSD concept not deployed to JIRA.
Is that correct?
Correct. Organization is a concept used in JSD.

Organization isn't a field in JSD. It's a different entity all together. Organizations are groups of customers that can be used in multiple projects.
