Planning with frozen period

Does it exists a way to define a global planning with 'frozen' periods so that no project version can be planned during these frozen period. Plus a way to display a planning with all versions planned for each day ?

I cannot understand most of your references here. What is a "Project Version planned"? How does your team plan this for each day?

For a JIRA project you can define multiple  versions. 

For each one you can define a date. You plan your vetsion
