I checked several add-ons to migrate projects and most of them seems complicated to export and import.
So I came with a plan to manually create the project on the new which matches exactly the old one and export the issue data from old and import it to new.
Does that sounds like a good plan? Am I going to lose data?

You will loose the history of all tickets. Also you need to create all sprints and versions, which you are going to import, before the import.

How about taking backup of entire instance and choosing the projects at Import?

Please, pay attention that it is not a trivial task to restore a project, it may require to perform some configuration in your destination Jira instance.
