I am planning on doing a new, clean Jira implementation, using CentOS 7.x (64-bit).
I understand that the Jira installer comes with Apache Tomcat bundled. My question is, are there any known issues or problems if I use the most current version of Apache Tomcat that comes a part of the CentOS 7.x distro?
If not, does this same hold true across the other pieces of the Atlassian suite stack (Confluence, Crowd, and Bitbucket)?

You are correct that it comes with a bundled version of tomcat. You can find the support platforms here:
This doesn't mean that the application absolutely won't work on a different version of tomcat. It's just that it hasn't been tested sufficiently enough to ensure a well running application.
The same applies for the other Atlassian products.
