If you are using JIRA Server, you can try the free add-on Jira Status Color or Color Custom Fields.
If you are using JIRA Cloud, I'm afraid that this is not possible at this moment, as you can see on this discussion:

Hello everyone! If you're looking to add color to a custom field, using emojis is a great way to do this. You can easily insert emojis by pressing Win + ".' (or the period key) or by right-clicking and selecting "Emoji" to search for the emoji you want. This method works exceptionally well for enhancing your text. I hope this helps!
