We don't have Sub-Task issue type in our setup so that's not an option. Anyway, I'm looking for something very lightweight, like the referenced GitHub or Bitbucket (BB has lightweight tasks in pull requests).

That is a separate field. What GitHub / Bitbucket provide is the ability to put checkboxes right in the main text.

I saw that post, I have github and I am extensively using this 'embedded task list' feature in Stash. Where do you want this to appear in a JIRA ticket? What main text?

Nothing like that. The closest you can get is the "check" icon. Take a look at JIRA Wiki Renderer (https://jira.atlassian.com/secure/WikiRendererHelpAction.jspa?section=all). It's not interactive at all and updating it means updating the source description/comment itself. Task one (/) Task two (X) Task three (!) Task four (/) Task five (/)
