We are currently using Jira Service desk for our call centre but we don't need the service desk function anymore; but we do want to retain the tickets.
What happens if we delete the service desk application subscription?
Will it delete all of the issues associated? If so can I convert all of those tickets into a Jira Core project? How would I go about doing that?

You are able to transform the Project type from Jira Service Desk to Jira Core or Software:

And you will keep the issues. When you delete your Jira Service Desk Subscription you will simply loose all JSD features like Customer Portal, Quenes and Service Desk Automations, etc.
The project with its issues will be still there and upon deleting Jira Service Desk all Project will transformed to Software or Core by default, I just tested this in my Dev instance. :)

I would suggest moving the issues into a different project and also creating a back up of your instance before moving the issues to restore the whole project (if needed...).
You could move issues from the Service Desk project into a JIRA Core project with a similar field configuration.
