On the hosted jira, how do we remove the none option from a custom field?

I presume you mean by on-demand? If it is simply hosted by a provider then do this - https://confluence.atlassian.com/display/JIRA/How+to+Remove+%27NONE%27+from+a+Select+List+Custom+Field

I do mean the On-Demand Jira. Does this answer still hold true?

And thank you.

If it is OnDemand, this is not possible. It is only possible if hosted elsewhere.

Thank you for all the answers guys. If I open a support ticket with Atlassian, can they make the change?
