Is it possible to set a dashboard where we can see the velocity of multiple sprint in one of the gadgets
The answer is always "Plug-ins". Atlassian is no long a viable tool with such a large dependency on these. Very few 3rd party tools will ever come close to passing vendor and security checks in Blue chip orgs.

eazyBI indeed allows reporting on multiple sprints on the same report.

In the given example, the report is designed to analyze data in all active sprints.

By default you can't have the velocity chart of the scrum board which shows historical velocity to be available on the dashboard.
You can use plugins like this - https://marketplace.atlassian.com/apps/1215768/agile-velocity-chart-gadget?hosting=server&tab=overview
Or reporting plugins like eazyBi or Dataplane.
