I have configured the incoming mail feature to add Comments to a particular project and this is working.
However as the system can not create users due to how our user management is configured (LDAP), it would be useful to include the from email address in the comment...
Could anyone advise how I may be able to achevie this without the need for an additional plugin?

Thanks Borris - this is how I have it configured. However I am creating comments not issues therefore the From field does not seem to be captured like it is for the create issue functionality...

I am also looking for this. I've read https://confluence.atlassian.com/display/JIRA/Appending+Email+Addresses+to+Comments+Made+by+Anonymous+Users+when+Using+a+Mail+Handler but this about Jira 3.13 and since it only points to file name and line number, it's a bit hard to dig up where in the current source code you might want to add the corresponding code now. I have also seen someone mentioning JEMH, but would prefer not to add yet another email handler thingy to our Jira, since we already have the JETI.

Default Reporter Specify the username of a default reporter, which will be used if the email address in the From: field of any received messages does not match the address associated with that of an existing JIRA user — for example, a JIRA username such as
emailed-reporter
Note:
- This option is not available if the Create Users check box is selected.
- Please ensure that the user specified in this field has the Create I ssues project permission for the relevantProject (specified above) as well as the Create Comments project permission for the other relevant projects to which this mail handler should add comments.
- When an issue is created and this option is specified, the email message's From: field address is appended in a brief message at the end of the issue's Description field, so that the sender can be identified.
