For Cloud & Server, you should set up a Permission Scheme that only allows the access to an "archived" project (read only or admins), and apply it to projects that you want to archive.

Project archiving is available for Jira Software Data Center and Jira Service Desk Data Center. To archive projects in Jira Server, see this kb article.

Can I archive the Project in Jira Cloud? Its only giving me option to Delete the project but no Archive option. Please do suggest.

Is it possible if Project Category will be added as Archived and category of the completed project will be changed as Archived? Seems like Permission Scheme is bit uncomfortable.

I think you can customize a project category named 'Archived' and move these Projects in, but this is just a project category. The project permission scheme still needs to be set as described above.

Ok, so both the options are manual based at the moment.
