Hi Brett,
you can go to the filters page and update "My Open Issues" filter with the following:
"assignee = currentUser() AND resolution = Unresolved AND issuetype != Sub-task ORDER BY updated DESC"
Then click "save as" and enter "My Open issues W/o sub-tasks" or whatever name you would like.
