My company recently upgraded from Jira Datacenter v8.22.4 -> Jira Datacenter v9.11.0. Since this upgrade, whenever I move an issue from one project to another, the Issue Type changes from the Issue Type of the ticket to Issue Type of Story.
I've searched and can't seem to find details on why this happens.
Is there a way to make sure the Issue Type does not change when moving a ticket?

Never mind. Figured it out. Apparently when we upgraded to the latest Jira version it reset the Issue Type default to Story for Projects that had the default Issue Type set to None.
Had to go through all of the workflows and update.
The issue type has to change if the target project does not have the current issue type enabled.
My guess is that the project you are moving issues into does not have Bugs, and Story is the default for it

Are these projects company managed or team managed (or a mix of both?)

Ok, team-managed projects do not share issue types, even when they have the same names. Your issue move has to change the type when you move the issue to a project, and it's probably using the default for the project.

can you look at the automation, may be you have some rules that changes the issue type. What do you see in the issue history tab ?

Per my original message, when I select a project from the dropdown, the Issue Type AUTOMATICALLY changes to Story, whatever the Issue Type is. I do not select the Issue Type.
