where and how are the screenschemes are store in the database or in server.

In the tables named fieldscreenscheme* in the database.

Why do you ask though?  The database is not something you want to use for reporting, and you definitely don't want to write to it.

All JIRA's data is in the database.  I don't know what you mean by "logwork screen"
